Gluten-Free Sangak

Unfolding The Secret to Sangak’s Tempting Texture

A well-made Sangak strikes a perfect balance, offering a crust that challenges your bite just enough, while tender crumb within simply melts in your mouth. Central to achieving this is the inclusion of key ingredients like xanthan gum and olive oil. Xanthan gum helps in mimicking gluten’s elasticity, thereby providing the dough with the necessary structure and stickiness. Added to this, olive oil contributes to the moistness and richness of the crumb, keeping your Sangak satisfying and perfectly textured.

The Sangak Connection: Beyond Borders, Beyond Bread

The Sangak bread bears rowdy comparisons to other international staples such as the Indian Naan or Middle Eastern Pita. However, the pronounced, nutty flavor from the sesame seeds, and the transformative magic of apple cider vinegar, gives Gluten-Free Sangak its own distinct identity, flavor profile and texture that sets it apart.

As versatile as it is enticing, Gluten-Free Sangak makes an ideal counterpart to a range of dishes. It can slyly sneak into breakfast, lunch, and dinner, pairing well with dips like hummus, or making a hearty sandwich with grilled vegetables, or even turning into a crisp base for a gourmet gluten-free pizza.

So, explore the world of Sangak – enjoy it warm from the oven, partner it with your favourite meals, or savor it on its own, bite by pleasurable bite and let this Persian gluten-free wonder earn a permanent place in your culinary repertoire.

What You’ll Need

  • 2 cups of gluten-free bread flour
  • 2 teaspoons of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 1 tablespoon of active dry yeast
  • 1 1/4 cups of warm water
  • 2 tablespoons of olive oil
  • 1 tablespoon of apple cider vinegar
  • 1/2 cup of sesame seeds
ALLERGENS: None

Method

Step One

Start by combining the gluten-free bread flour, xanthan gum, salt, and sugar in a large mixing bowl.

Step Two

Dissolve the active dry yeast in the warm water and allow it to sit for about 10 minutes until it becomes frothy.

Step Three

Add the yeast mixture, olive oil, and apple cider vinegar to the dry ingredients in the mixing bowl. Stir everything together until well mixed.

Step Four

Cover the dough and let it rise in a warm place for approximately an hour, or until it has doubled in size.

Step Five

Preheat your oven to 450 degrees Fahrenheit (220 degrees Celsius). If you have a baking stone, preheat that as well.

Step Six

Dust a pizza peel or the back of a baking sheet heavily with cornflour or rice flour. Roll out the dough until it is about 1/4 inch thick.

Step Seven

Lightly brush the top of the dough with water and then sprinkle it with the sesame seeds.
