What You’ll Need

  • 2 cups of gluten-free rice flour
  • 1/2 cup of urad dal (split black lentils)
  • 1/2 tsp of fenugreek seeds (optional)
  • 1 cup of water for soaking
  • 1 1/2 cups of water for grinding
  • Salt to taste
  • Vegetable oil for cooking

Method

Step One

Measure out 2 cups of gluten-free rice flour, 1/2 cup of urad dal, 1/2 tsp of fenugreek seeds. Gather all the other ingredients you need for the recipe.

Step Two

Take urad dal and fenugreek seeds in a large bowl. Add 1 cup of water to it. Let them soak for at least 4 to 5 hours.

Step Three

Once the dal is well soaked, drain the water. Next, transfer the soaked urad dal and fenugreek seeds to a blender. Add 1/2 cup of water for grinding and blend until it forms a smooth batter.

Step Four

In a separate mixing bowl, take 2 cups of gluten-free rice flour. Slowly add water to it, whisking it continuously to avoid any lumps. The consistency should be like pancake batter.

Step Five

Add the blended urad dal and fenugreek seeds mixture to the rice flour batter along with salt to taste. Mix well and let it ferment overnight or for 8 to 10 hours.

The next morning, give the batter a good stir. If it is too thick, add a little water to adjust the consistency. It should be pourable, not too thick and not too thin.

Step Seven

Preheat a non-stick pan or flat griddle. Pour a ladleful of batter onto the pan. Spread it out in a circular motion, like a pancake, a little thicker than traditional dosa.

Step Eight

Drizzle a few drops of vegetable oil around the edges of the dosa. Let it cook for 2-3 minutes until the bottom part is golden brown. Flip it and cook the other side.
