Why I Love Mexican Fish Tacos with Grilled Pineapple Salsa
Today, I want to share a recipe that is very dear to my heart: Fish Tacos with Grilled Pineapple Salsa. This colorful Mexican dish brings me back to the multitude of flavors I experienced while travelling across Mexico. The first time I tried them, I knew I had to bring this dish into my own kitchen. Not only does this recipe remind me of warm, sunny days in Mexico, it also perfectly combines with my deep love for seafood.
The Flavor Fusion
When I think about Fish Tacos with Grilled Pineapple Salsa, the first thing that comes to mind is the fusion of flavors. The sweetness of the pineapple perfectly balances out the spiciness of the jalapenos. Combining these flavors with the warm white fish fillets is a taste sensation unlike any other. Growing up in Seattle, I was exposed to a great variety of fresh fish. This, combined with my frequent visits to Japan, has made seafood a staple in my diet. Therefore, adding seafood into this traditional Mexican dish feels only natural to me.
Credits to Inspiration
This dish would not be here today without the inspiration of Enrique Olvera, an acclaimed Mexican chef renowned for his creative twists on traditional Mexican cuisine. His out-of-the-box thinking and drive for flavor have truly inspired me to get creative in my own kitchen.
Paying Homage to My Roots
Surprisingly enough, this recipe pays homage to both my Japanese heritage and my upbringing in the Pacific Northwest. The careful filleting and preparation of the fish fillets resembles the intricate craft of making sushi. Also, the ingredients of the grilled pineapple salsa, like cilantro and red pepper, are items often found at the local markets in Seattle.
Conclusion
In conclusion, this Fish Tacos with Grilled Pineapple Salsa recipe blends my love for seafood with the authenticity of Mexican cuisine. The fusion of flavors is an experience in itself, taking me back to those sunny Mexican afternoons. I look forward to sharing many more recipes that combine my appreciation for global cuisine with my love for the sea.
What You’ll Need
- 1 cup diced fresh pineapple
- 1 cup diced red bell pepper
- 1/2 cup chopped fresh cilantro
- 1/2 red onion, diced
- 2 jalapenos, seeded and finely chopped
- 2 limes, juiced
- Salt, to taste
- 1 pound white fish fillets (like tilapia, cod, or mahi mahi)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 6 tortillas
- 1 cup shredded lettuce
- 6 tablespoons sour cream
- 6 lime wedges, for serving
Method
Step One
Firstly, prepare the Grilled Pineapple Salsa. Combine the diced fresh pineapple, diced red bell pepper, chopped fresh cilantro, diced red onion, and finely chopped jalapenos in a bowl. Add the lime juice and season it with salt to taste. Afterward, set aside. This will allow the flavors to merge.
Step Two
Preheat your grill to medium heat. While waiting for the grill to heat up, season your white fish fillets with chili powder, ground cumin, paprika, black pepper, salt, and cayenne pepper. Make sure the spices are properly spread over the fish fillets.
Step Three
Lightly oil the grill grates with the olive oil to prevent the fish from sticking. Carefully place your seasoned fish fillets on the grill, and cook for about 3 to 4 minutes on each side or until opaque and flakes easily with a fork. Remove them from the grill and set aside.
Step Four
Grill the tortillas for about 1 minute on each side or until they get nice grill marks. Remove them from the grill and set aside.
Step Five
It’s now time to assemble your fish tacos. On each grilled tortilla, place some shredded lettuce, then top it with a piece of grilled fish. Spoon some of the Grilled Pineapple Salsa on top of the fish, and finish with a dollop of sour cream. Repeat this for the rest of the tortillas.
Step Six
Serve your Fish Tacos with Grilled Pineapple Salsa with lime wedges on the side. Squeeze some fresh lime juice over the tacos right before eating for an extra zing! Enjoy.
