What You’ll Need

  • 3 medium kohlrabi peeled and sliced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup fresh pineapple chunks
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Method

Step One

Start by preparing your ingredients. Peel and slice the kohlrabi. Slice the red and yellow bell peppers, red onion and green onions. Then, mince the garlic and fresh ginger. Put aside the pineapple chunks and sesame seeds for later use.

Step Two

In a large skillet or wok, heat the vegetable oil over medium heat. Once the oil is hot, add the kohlrabi slices and stir-fry them for about 5 minutes, until they start to turn golden brown.

Step Three

Add the sliced red and yellow bell peppers and red onion to the skillet. Stir-fry these vegetables for another 5 minutes, until they are tender and slightly caramelized.

Step Four

Add the minced garlic and ginger to the skillet, followed by the soy sauce and sesame oil. If you like your stir-fry a bit spicy, you can also add the red pepper flakes at this step. Stir everything together and cook for another 2 minutes.

Step Five

Add the pineapple chunks to the skillet and stir everything together. Cook for about 1-2 minutes until the pineapple is heated through. This will add a sweet and tangy flavor to your stir-fry.

Step Six

Finally, garnish your stir-fried kohlrabi with the sliced green onions and sesame seeds right before serving. Enjoy your delicious and healthy stir-fried kohlrabi!
