What You’ll Need

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 pound chorizo sausage, sliced
  • 2 cans (14 oz each) diced tomatoes
  • 2 cans (14 oz each) hearts of palm, drained and sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 bunch fresh cilantro, chopped
  • 6 cups cooked white rice, for serving
ALLERGENS: Onions, garlic, red bell pepper, chorizo sausage, tomatoes, hearts of palm, paprika, salt, black pepper, red pepper flakes, cilantro, white rice

Method

Step One

Heat the olive oil in a large pot over medium-high heat. Add the finely chopped onion, minced garlic, and sliced red bell pepper. Sauté these ingredients until the onion becomes translucent.

Step Two

Add the sliced chorizo sausage to the pot. Continue to cook until the sausage is browned on all sides.

Step Three

Pour in the 2 cans of diced tomatoes, along with their juice. Stir until the ingredients are well combined.

Step Four

Add the drained and sliced hearts of palm to the pot, stirring them in. Season the stew with paprika, salt, black pepper, and crushed red pepper flakes.

Step Five

Reduce the heat to low, cover the pot, and let the stew simmer for about 20 minutes.

Step Six

Uncover the pot and stir in the chopped fresh cilantro. Let the stew cook for a few more minutes.
