What You’ll Need

  • 1.5 lbs Chicken Breast
  • 12 whole Wheat Wraps
  • 1.5 cups Fish Mint Leaves (Vietnamese Coriander)
  • 3 medium-sized Tomatoes
  • 2 medium-sized Avocadoes
  • 1.5 cups of diced Pineapples
  • 3 medium-sized Bell Peppers
  • 6 Tablespoons of Olive Oil
  • Salt to taste
  • Pepper to taste
  • 3 cloves of Garlic, minced
  • 1.5 cups of Greek Yogurt
  • 1.5 Tablespoons of Lime Juice
ALLERGENS: Fish, Wheat, Pineapples, Milk

Method

Step One

Begin by heating up 4 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the minced garlic and sauté it until it becomes fragrant.

Step Two

Add the chicken breasts to the skillet. Season them with salt and pepper to taste. Cook the chicken breasts for about 6-8 minutes on each side, or until they are fully cooked and golden brown.

Step Three

While the chicken is cooking, start preparing your veggies. Dice the tomatoes, avocados, and bell peppers. Also, chop the fish mint leaves into thin slices. Set everything aside.

Step Four

In another pan, add 2 tablespoons of olive oil and sauté the diced pineapples until they become slightly caramelized.

Step Five

Once the chicken is cooked, remove it from the heat and let it cool for a few minutes. After it has cooled, shred the chicken using two forks.

Step Six

To make the sauce, mix together the Greek yogurt and lime juice in a bowl.

Step Seven

It’s time to assemble the wraps. Place a wheat wrap on a clean surface. Spread a generous amount of the Greek yogurt sauce on the wrap. Top it with some shredded chicken, diced tomatoes, avocado, caramelized pineapples, bell peppers, and fish mint leaves. Fold in the sides of the wrap and roll it up tightly. Repeat this process for the remaining wraps.

Step Eight
