What You’ll Need

  • 1 cup dried red lentils
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon ground cumin
  • 1/2 tablespoon turmeric
  • 1 tablespoon tomato paste
  • 6 cups vegetable broth
  • 1 cup Kutjura (Bush Tomato), fresh or dried
  • 1 can (14 oz) diced tomatoes
  • 2 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • Squeeze of lemon juice
  • Handful of fresh coriander/cilantro, chopped

Method

Step One

Begin by rinsing the red lentils under cold water. Once cleaned, set aside.

Step Two

Heat the olive oil in a large pot over medium heat. Add in the finely chopped onion and garlic, sautéing until the onion becomes translucent. This should take around 5 minutes.

Step Three

Add in the ground cumin and turmeric to the sautéed onion and garlic. Stir well, cooking for about 2 minutes to allow the spices to release their flavors.

Step Four

Stir in the tomato paste until well combined with the ingredients.

Step Five

Pour in the vegetable broth, stirring to combine. Add the cleaned lentils, Kutjura (Bush Tomato), diced tomatoes, chopped carrots, and chopped celery. Stir the mixture well to combine all ingredients.

Step Six

Bring the soup to a boil. Once boiling, decrease the heat to low, cover the pot, and let simmer for about 25-30 minutes until the lentils and vegetables are tender.

Step Seven

Season your soup with salt and pepper to taste. Add a squeeze of lemon juice for a hit of acidity.

Step Eight

Just before serving, stir in the fresh chopped coriander/cilantro. Ladle your Kutjura Lentil Soup into bowls and serve hot. Enjoy your hearty and flavorful dish!
