What You’ll Need

  • 3 medium cucumbers
  • 1 tablespoon of salt
  • 2 green onions, thinly sliced
  • 1 clove garlic, minced
  • 1 chili pepper, finely chopped
  • 1/4 cup of white vinegar
  • 1/4 cup of Korean chili powder (gochugaru)
  • 2 tablespoons of sugar
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of sesame oil

Method

Step One

Let the cucumbers sit for about 15 minutes – this will draw out any excess water.
