Taro Root Pancake

The Infusion of Tradition and Innovation

Throughout my upbringing in Texas, I’ve been constantly exposed to a wonderful fusion of Southern and Mexican culinary traditions. This Taro Root Pancakes recipe reflects that fusion perfectly. Taro, a root vegetable that originates from Southeast Asia, is common in various global cuisines including Mexican dishes. By integrating it into a pancake recipe, the Taro Root Pancakes bring a delightful surprise – a dish that is both intriguingly different and comfortingly familiar.

Nutritional Benefits

Beyond deliciousness, these pancakes serve a hearty dose of health benefits. Taro root, the star ingredient, is packed with fiber, vitamins, and minerals. It is particularly rich in vitamin E, a powerful antioxidant that promotes skin health, and vitamin C, essential for boosting immunity. Its high potassium content means it’s great for heart health too, and the substantial dietary fiber aids digestion.

That’s not to mention the added bonuses from the rest of the ingredients – the proteins from eggs, the calcium from the milk, and the fresh fruits that top the pancake, adding a refreshing burst of vitamins and flavours.

Recipe Pairings and Similar Dishes

If you’re a fan of unique fusion, this recipe will remind you of Potato Latkes or even the Japanese Okonomiyaki. You could pair your Taro Root Pancakes with a savoury salsa for a Tex-Mex flavor or keep it classic with a squeeze of fresh lemon and a dusting of powdered sugar. I personally enjoy them with a drizzle of maple syrup and a side of crispy bacon strips.

So the next time you are feeling adventurous and want to try something new for breakfast, I would highly recommend these delightful and healthy Taro Root Pancakes. Not only are they an indulgent treat to start your day with, but they also pack a powerful nutrition punch to keep you energised throughout the day.

What You’ll Need

  • 1 cup of shredded taro root
  • 1 cup of all-purpose flour
  • 1 cup of milk
  • 2 large eggs
  • 1/4 cup of granulated sugar
  • 2 tablespoons of melted unsalted butter
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 cup of diced mixed fruit (such as apples, bananas, or peaches)
  • Additional unsalted butter for cooking
  • Syrup of choice for serving
ALLERGENS: Milk, Eggs, Wheat, Gluten

Method

Step One

Start by preparing all the ingredients. Peel the taro root and shred it into small pieces. Dice the mixed fruits into small pieces and set them aside.

Step Two

In a large bowl, combine the shredded taro root with the all-purpose flour, baking powder, and salt. Stir the mixture until it is well mixed.

Step Three

In another bowl, whisk the two large eggs then add the granulated sugar and continue whisking until the mixture is creamy. Add in the melted butter, milk, and vanilla extract and whisk until well incorporated.

Step Four

Pour the wet mixture into the bowl with the dry ingredients and mix until they are combined. Be careful not to over mix. Stir in the diced mixed fruits.

Step Five

Heat a flat skillet or pan over medium heat. Add a small amount of unsalted butter to coat the bottom of the pan. Once the butter has melted, pour 1/4 cup of the pancake batter into the pan for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until it is golden brown.

Step Six

Continue this process until all the pancake batter is used up. You may need to add more butter between batches to prevent the pancakes from sticking to the pan.

Step Seven

Finally, serve your taro root pancakes with your choice of syrup and enjoy while still hot.
