What You’ll Need

  • 2 pounds of pork shoulder
  • 1/2 pound of pork fat
  • 1 tablespoon of salt
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of ground nutmeg
  • 4 cloves of garlic, minced
  • 1/4 cup of red wine
  • 1/4 teaspoon of curing salt
  • 10 feet of hog casings

Method

Step One

Chop the 2 pounds of pork shoulder and 1/2 pound of pork fat into small pieces. Make sure they are small enough to fit into your meat grinder.

Step Two

Place the chopped pork and fat in a large bowl. Add the 1 tablespoon of salt, 1 teaspoon of ground black pepper, 1 teaspoon of ground nutmeg, and minced garlic. Mix well to ensure all pieces are evenly coated.

Step Three

Pour in the 1/4 cup of red wine, ensuring it gets across all the meat. Add the 1/4 teaspoon of curing salt and mix well.

Step Four

Cover the bowl and refrigerate for about an hour. This allows the flavors to thoroughly permeate the meat.

Step Five

While the meat is chilling, prepare your hog casings. Rinse the 10 feet of hog casings well in warm water.

Step Six

Grind the chilled meat and spice mixture through the coarse plate of your meat grinder into a large bowl.

Step Seven

Stuff the ground meat mixture into the hog casings. Be careful not to overstuff.

Step Eight

Twist the sausages into links at your desired length.

Step Nine

Allow the sausages to cure in the refrigerator for 2 days before cooking or freezing. This will allow the flavors to meld together.
