What You’ll Need

  • 6 large Portobello mushrooms
  • 1 and 1/2 cups of BBQ sauce
  • 2 tablespoons of olive oil
  • 1 large red onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 6 large tortilla wraps
  • 2 cups of iceberg lettuce, shredded
  • 1 cup of vegan mayonnaise
  • 1/2 cup of diced pickles
  • Salt and pepper to taste

Method

Step One

First, clean your portobello mushrooms by wiping them down with a damp paper towel to remove any dirt or debris. Remove the stems and scrape out the gills, then slice the mushrooms into 1/2 inch thick slices.
