What You’ll Need

  • 2 Banana piths
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 ripe tomatoes, peeled, and chopped
  • 3 tablespoons oil
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/4 cup chopped fresh coriander leaves, for garnish
  • 6 cups water

Method

Step One

First of all, start by cleaning the banana piths. Peel off the outer layer of the pith and then soak it in salted water for about 10 to 15 minutes to reduce its bitterness.

Step Two

In a large pot, bring the 6 cups of water to a boil. Add the banana piths into the boiling water and let them cook for 10 to 15 minutes, or until they are tender. Once done, drain the water and slice the piths into thin pieces.

Step Three

While waiting for the piths to boil, start preparing the tomato sauce. In a large pan, heat the oil over medium heat. Once hot, add in the chopped onion and minced garlic. Stir and cook until the onion becomes translucent.
