What You’ll Need
- 2 cups of jasmine rice
- 1.5 pounds of Isaan sausage
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3 eggs, beaten
- 1 red bell pepper, chopped
- 2 green onions, sliced
- 1 cup of chopped fresh cilantro
- 2 tablespoons of fish sauce
- 1 tablespoon of soy sauce
- 1 tablespoon of oyster sauce
- 2 teaspoons of sugar
- 1/2 teaspoon of white pepper
- 1/2 teaspoon of salt
- 3 tablespoons of vegetable oil for frying
- 1 Lime, cut into wedges for serving
Method
Step One
First, prepare your ingredients: chop the onion, red bell pepper, and green onions, mince the garlic, beat the eggs, chop the fresh cilantro, and cut the lime into wedges. Set these aside for later.
Step Two
Heat 1 tablespoon of the vegetable oil in a large pan or wok over medium heat. Once hot, add in the Isaan sausage. Cook until the sausage is browned and crispy, then remove from the pan and set aside.
Step Three
In the same pan, add another tablespoon of oil. Add in the chopped onion and cook until it’s softened. Then, add in the garlic and cook for another minute until it’s fragrant.
Step Four
Create a well in the center of the pan by pushing the onion and garlic to the sides. Add the last tablespoon of oil into the center, then pour the beaten eggs into the well. Scramble the eggs and mix them with the onion and garlic.
Step Five
Add the cooked Isaan sausage back into the pan. Also, add the chopped red bell pepper and sliced green onions. Stir well to combine everything.
Step Six
Next, add in the jasmine rice. Stir well to mix the rice with all the ingredients in the pan. Make sure the rice is coated well with the juices in the pan.
Step Seven
For the sauce, mix together the fish sauce, soy sauce, oyster sauce, sugar, white pepper, and salt. Pour this sauce over the fried rice in the pan. Stir well to make sure the sauce is well distributed throughout the rice.
Step Eight
Finally, remove the pan from heat and stir in the chopped fresh cilantro. Serve the Isaan sausage fried rice with lime wedges on the side.
