If you’ve followed my culinary journey, you well know that my love for vibrant, flavorful and healthy dishes goes far beyond my hometown of New York. Today’s recipe – Roasted Prussian Asparagus with Hollandaise Sauce – is a real showstopper. It’s an ode to the beautiful, fresh produce of Spring, offering a taste that is not only indulgent but also health promoting. This recipe truly encapsulates the essence of my cooking philosophy – a fusion of diverse flavors that are both delightful and beneficial for health.

The Flavorful Magic in the Simplicity

Roasted Prussian Asparagus with Hollandaise Sauce is a classic, echoing the underpinnings of the true culinary arts, where simple ingredients, thoughtfully prepared can create a masterpiece. There’s a beautiful synergy in how the slightly crisp asparagus, coated in heart-healthy olive oil, meets the rich, buttery and tangy hollandaise. Just like a well-executed theatrical performance, this dish is about balance and timing to create a memorable experience.

Health Benefits and Pairing Suggestions

Asparagus is a powerhouse of nutrients. The vibrant stalks are rich in folate, fiber, and vitamins A, C, E and K. As a prebiotic, it aids digestive health by feeding beneficial bacteria in your gut, while its antioxidant properties may help protect your cells from harmful free radicals. Adding this to your diet, in tandem with a rich sauce like hollandaise, not only makes for a delectable pairing, but also a healthier one. The butter in hollandaise contributes healthy fats, and the lemon juice gives a vitamin C kick.

This dish can confidently stand on its own, yet it pairs beautifully with various proteins. If you’re looking for an entree pairing, a perfectly roasted chicken or simple grilled salmon would complement this side dish quite elegantly. For a wine pairing, a crisp Sauvignon Blanc or a light, citrusy Pinot Grigio would be quite harmonious.

Try this Roasted Prussian Asparagus with Hollandaise Sauce. You’ll find that you’re not just serving a side dish – you’re giving your loved ones an indulgent health boost with a plate that clearly mimics the culinary diversity I so love about New York. I hope you fall for it, just the way I did!

What You’ll Need

  • 2 pounds of fresh green asparagus
  • 3 tablespoons olive oil
  • Salt and Pepper to taste
  • For Hollandaise Sauce:
    • 4 egg yolks
    • 1 tablespoon freshly squeezed lemon juice
    • 1/2 cup unsalted butter, melted
    • Pinch cayenne pepper
    • Salt to taste
  • For garnish:
    • Fresh lemon wedges
ALLERGENS: Eggs, Dairy

Method

Step One

Preheat your oven to 425 degrees F (220 degrees C). While the oven is warming up, clean the asparagus by rinsing under cold water. Snap off the tough ends and discard.

Step Two

Arrange the asparagus on a baking sheet in a single layer. Drizzle with olive oil and season with salt and pepper. Toss to coat the asparagus evenly and then roast in the preheated oven for about 15 minutes, until tender and lightly browned. The roasting time will depend on the thickness of the asparagus stalks.

Step Three

While the asparagus is roasting, prepare the hollandaise sauce. First, place the egg yolks and freshly squeezed lemon juice into a heatproof bowl. Whisk until the mixture is light and frothy.

Step Four

Place the bowl over a pan of gently simmering water, making sure the bowl does not touch the water. Slowly add the melted butter, whisking continuously until the sauce thickens. Remove from the heat and season with a pinch of cayenne pepper, and salt to taste. Note: If the sauce gets too thick, you can thin with a few drops of warm water.

Step Five

Arrange the roasted asparagus on a serving platter, drizzle generously with the hollandaise sauce. Garnish with fresh lemon wedges before serving.
