What You’ll Need

  • 2 cans (20 oz each) young green jackfruit in water
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup vegetable broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 6 hamburger buns
  • 2 cups coleslaw
ALLERGENS: Wheat (in hamburger buns), Garlic

Method

Step One

First, drain and rinse the jackfruit. Cut the core portion of the jackfruit (tip) and discard. Pull apart the jackfruit pieces from the can.

Step Two

Heat the olive oil in a pan and add diced onion. Cook until the onion becomes slightly translucent. After that add the minced garlic and cook for couple of more minutes.

Step Three

Add the prepared jackfruit, barbecue sauce, vegetable broth, smoked paprika, salt, black pepper and chili powder to the pan. Stir until all the ingredients are well combined.

Step Four

Cover the pan and let it simmer for about 20-25 minutes. After that, using a fork, break up the jackfruit to look like pulled meat. Stir and let it cook for another 5-10 minutes, until the BBQ sauce has been absorbed by the jackfruit.

Step Five

Spoon the jackfruit mixture onto the lower half of each hamburger bun and top the mixture with coleslaw. Cover with the top half of the bun. Repeat with the remaining buns.

Step Six
