What You’ll Need

  • 1 1/2 cups of all-purpose flour
  • 1 cup of granulated sugar
  • 2 teaspoons of baking powder
  • Zest and juice of 2 lemons
  • 3/4 cup of unsalted butter, softened
  • 3 large eggs
  • 1/2 cup of elderflower cordial
  • 1/2 cup of milk
  • For the drizzle:

  • 1/2 cup of granulated sugar
  • 1/4 cup of elderflower cordial
  • Juice of 1 lemon
ALLERGENS: Wheat, Milk, Eggs

Method

Step One

Preheat your oven to 350°F (180°C). Grease and line a 9×5 inch loaf pan with parchment paper.

Step Two

In a large bowl, combine the all-purpose flour, granulated sugar, baking powder and lemon zest. Mix well.

Step Three

Beat the softened butter into the flour mixture until it resembles fine breadcrumbs.

Step Four

In a separate bowl, lightly whisk the eggs. Gradually add these to your mixture, stirring well.

Step Five

Add the elderflower cordial and milk into the mixture. Stir until the ingredients are well combined. Add the lemon juice and mix again.

Step Six

Transfer the cake batter into your prepared loaf pan, leveling the top with a spoon. Bake for about 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step Seven

While the cake is baking, prepare the drizzle. Combine the granulated sugar, elderflower cordial and lemon juice in a small saucepan. Heat over low heat until the sugar has completely dissolved.

Step Eight

Once baked, take the cake out from the oven and immediately poke holes all over its top with a skewer. Pour the prepared drizzle over the hot cake, ensuring it seeps into the holes.

Step Nine

Leave the cake in the pan to cool completely before slicing and serving. Your Elderflower and Lemon Drizzle Cake is ready to be enjoyed!
