On a trip to Japan many years ago, I stumbled upon the humble Burdock root. It was an off-beat ingredient that wasn’t common in the States, and it certainly wasn’t on my usual menu. But the intriguing taste led me to experiment with it upon my return. It’s been a favorite ever since, making an almost weekly appearance at my dinner table. What began as an adventure, turned into the creation of the perfect vegetable based Burdock Root Stir Fry.

What You’ll Need

  • 1.5 pounds of burdock root
  • 3 tablespoons of vegetable oil
  • 1 cup of sliced carrots
  • 2 medium-sized bell peppers, sliced
  • 1 cup of sliced mushrooms
  • 2 cloves of garlic, minced
  • 1 tablespoon of grated ginger
  • 1/4 cup of soy sauce
  • 2 tablespoons of brown sugar
  • 1/2 cup of pineapple juice
  • 2 cups of diced pineapple
  • 6 green onions, chopped
  • Sesame seeds for garnish (optional)

Method

Step One

Begin by prepping all of your ingredients. Peel the burdock root and slice it into thin, diagonal pieces. This not only makes for a visually appealing dish but also ensures that they’re cooked evenly. Also, slice your carrots, bell peppers, mushrooms, and chop the green onions. Lastly, mince your garlic and grate your ginger.

Step Two

Preheat a large pan or wok over medium heat. Once hot, add in the vegetable oil. Then, add in the burdock root slices and stir fry them for about 5 minutes, until they start to turn golden.

Step Three

Next, add the sliced carrots into the pan along with the burdock root and continue to stir fry for another 5 minutes, until the carrots soften.

Step Four

Introduce the sliced bell peppers and mushrooms to the mix, and stir fry for another 5 minutes, until the mushrooms release their juices and the bell peppers soften.

Step Five

Add in the minced garlic and grated ginger to the pan, and stir well to combine with all the ingredients. Cook for about 1-2 minutes until aromatic.

Step Six

In a separate bowl, combine the soy sauce, brown sugar, and pineapple juice. Pour this sauce over the stir fry, stirring well until all the ingredients are coated. Allow this to simmer for a few minutes, until the sauce has reduced slightly.

Step Seven

Stir in the diced pineapple and chopped green onions, mixing well to ensure they’re evenly distributed throughout the stir fry.

Step Eight

Just before serving, sprinkle the optional sesame seeds over the top for garnish. Enjoy your burdock root stir fry while it’s still warm!
