As a Louisiana native with a deep-rooted appreciation for gastronomic traditions, I have always been drawn to recipes that marry the familiar with a hint of the exotic. One of my absolute favourites in this regard is Chicken with Bermuda Onion Cream Sauce. This delectable dish captures the delicate, yet savory profile that is characteristic of my blend of Creole and French culinary inheritance, with a layer of confluence that makes it all the more enticing.

Health Benefits and Flavor Profile

The Chicken with Bermuda Onion Cream Sauce ensures you not only get a mouthful of delight but a good pack of nutritional benefits. Chicken, a lean protein, forms the heart of this recipe, immediately making it an excellent choice for those seeking a muscle-friendly, heart-healthy option. The addition of olive oil, a rich source of monounsaturated fats, adds beneficial antioxidants that give this dish a healthy boost. Furthermore, garlic used in this recipe is globally recognized for its potential in reducing cholesterol and blood pressure.

The real breakthrough, though, is the use of the Bermuda onion. This vegetable is not just a beautiful purple color; it is packed with powerful antioxidants and vitamin C. And, when sautéed to a delightful caramel hue, it delivers a sweet and savory depth of flavor that enrobes the chicken so wonderfully well in the cream sauce.

This recipe, resonating with the vibrant flavors, is somewhat reminiscent of Chicken à la King, a classic dish with a depth of flavor. It also pairs phenomenally well with lighter sides like a crisp green salad or steamed vegetables, to balance out the creaminess of the sauce.

What You’ll Need

  • 6 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large Bermuda onion, sliced
  • 2 cloves of garlic, minced
  • 1 cup dry white wine
  • 1 cup heavy cream
  • Salt to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
ALLERGENS: Chicken, Olive oil, Garlic, Wine, Heavy cream

Method

Step One

Season the chicken breasts with salt and pepper. Heat olive oil in a large frying pan.

Step Two

Add the chicken breasts and sear them over medium heat until browned on both sides. Once browned, remove them from the pan and set them aside.

Step Three

In the same pan, add the sliced Bermuda onion and minced garlic. Saute these until the onions become translucent.

Step Four

Add the cup of dry white wine to the pan, being sure to scrape the bottom of the pan to deglaze it and pick up any browned bits. Allow this mixture to simmer until the wine has reduced by half.

Step Five

Stir in the cup of heavy cream, and return the chicken to the pan. Allow everything to simmer together until the chicken is cooked through and the creamy sauce has slightly thickened.

Step Six

Right before serving, stir in the chopped parsley and lemon juice. Adjust the seasoning with additional salt and pepper if needed. Serve the chicken with a generous serving of the creamy Bermuda onion sauce. Enjoy this delicious chicken with Bermuda Onion Cream Sauce!
