What You’ll Need

  • 1.5 pounds of boneless skinless chicken breasts
  • 1/4 cup of fresh lime juice
  • 1/4 cup of olive oil
  • 2 teaspoons of Mexican oregano
  • 1 teaspoon of ground cumin
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • 3 cloves of garlic, minced
  • 1 large onion, thinly sliced
  • 3 bell peppers (one red, one green, one yellow), thinly sliced
  • 12 flour tortillas
  • 2 avocados, sliced
  • 1 cup of chopped fresh cilantro
  • 6 lime wedges
  • Pico de gallo, for serving
  • Sour cream, for serving

Method

Step One

Begin by combining the fresh lime juice, olive oil, Mexican oregano, ground cumin, sea salt, black pepper, and minced garlic in a bowl. This will be your marinade for the chicken.

Step Two

Place the chicken breasts in a large resealable bag and pour the marinade over them. Make sure all the chicken pieces are thoroughly coated with the marinade. Seal the bag and refrigerate it for at least 1 hour, or ideally overnight.

Step Three

When you are ready to cook, preheat your grill or skillet over medium-high heat. In the meantime, remove the chicken from the marinade and discard any remaining marinade.

Step Four

Cook the chicken on the preheated grill or skillet for about 5-7 minutes on each side, or until it is no longer pink in the center and the juices run clear. Once the chicken is fully cooked, remove it from heat and let it rest.

Step Five

While the chicken is resting, sauté the thinly sliced onion and bell peppers in a separate skillet with a bit of olive oil. Cook them until they are softened and slightly caramelized.

Step Six

Once the chicken has rested, slice it into thin, bite-sized strips. Add these to the skillet with the onions and peppers, stirring them in to mix and heating if necessary.

Step Seven

Heat your flour tortillas according to the package instructions. Once they are warm, you can start assembling your fajitas. Place some of the chicken, onion, and bell pepper mixture on each tortilla, add some sliced avocado and chopped fresh cilantro.

Step Eight

Finally, serve the fajitas with a wedge of lime, a dollop of sour cream and some pico de gallo on the side for guests to add as they please. Enjoy your Mexican Oregano Chicken Fajitas!
