What You’ll Need

  • 2 cups of fresh pennywort leaves
  • 6 cups of water
  • 1 cup of sugar
  • 1 cup of crushed ice
  • 1/2 cup of lime juice

Method

Step One

Begin by washing the fresh pennywort leaves thoroughly under running water to remove any dirt or impurities. Once clean, set them aside.

Step Two

In a large pot, bring the 6 cups of water to a boil.

Step Three

Once the water is boiling, add the cleaned pennywort leaves into the pot. Let them boil for about 15 minutes or until the leaves have wilted and turned a dark green color.

Step Four

After boiling the leaves, strain the mixture into another pot, making sure to press the leaves to extract all the juice. Discard the leaves.

Step Five

Add 1 cup of sugar to the pennywort juice and stir until the sugar has completely dissolved.

Step Six

Let the mixture cool down for a while, then add in the 1/2 cup of lime juice. Stir well.

Step Seven

Serve the pennywort juice over glasses filled with crushed ice. Enjoy your refreshing and healthy pennywort juice!
