  • 2 cups of Water
  • 1/2 teaspoon of Salt
  • 1 cup of packed Rice Paddy Herbs leaves, roughly chopped
  • 2 ripe Mangos, peeled and cut into small pieces
  • 2 ripe Avocados, peeled and cut into small pieces
  • 1/2 cup of Red Onion, finely chopped
  • 1 Red Bell Peppers, finely chopped
  • 1/4 cup of Lime Juice
  • 1/4 cup of Extra Virgin Olive Oil
  • Salt and Black Pepper to taste

Method

Step One

Start by cooking the long-grain white rice. Use a medium saucepan and add the 1 cup of rice, 2 cups of water, and 1/2 teaspoon of salt. Bring the mixture to a boil over medium-high heat, then lower the heat to simmer, cover, and let it cook for 15-20 minutes until the rice is tender and the water is absorbed.

Step Two

While the rice is cooking, begin preparing the rest of the ingredients. Start with the rice paddy herbs, mangos, and avocados. Roughly chop 1 cup of rice paddy herb leaves and set them aside. Then, peel and cut the 2 ripe mangos and the 2 ripe avocados into small pieces. Set these aside as well.

Step Three
