What You’ll Need

  • 6 whole pomfret fish, scaled and gutted
  • 2 large ripe mangoes
  • 3 tablespoons of lemon juice
  • 1/3 cup of sugar
  • 1/2 cup of water
  • 2 cloves of garlic, minced
  • 1 large onion, minced
  • 2 tablespoons of vegetable oil
  • 2 green chilies, deseeded and chopped
  • Salt to taste
  • 1 bunch of fresh cilantro, chopped
  • 1 inch piece of fresh ginger, grated

Method

Step One


Firstly, begin by preparing the mango sauce. Peel and dice the ripe mangoes. In a saucepan, place the diced mangoes, sugar, water, and lemon juice. Bring to a simmer and let it cook until the mangoes are soft and the sauce is relatively thick.

Step Two


While the mango sauce is simmering, prepare the fish. Ensure the Pomfret fish are scaled and gutted. With salt, season the fish on all sides.

Step Three


In a separate pan, heat the vegetable oil over medium heat. Once heated, add the minced onion, grated ginger, minced garlic, and chopped green chilies. Sauté until the onions turn golden brown.
