Wattleseed Chicken Stir Fry

From the heart of my Southern kitchen to yours, I am beyond excited to share one of my absolute favorite fruit driven dishes – the delectable Wattleseed Chicken Stir Fry. This recipe elevates a classic stir fry with a uniquely fruit-forward twist, balancing the rich, earthy flavor of wattleseed with the vibrant tang of orange and lime. The savory dance of chicken, bell peppers, onions, and broccoli harmonious with the sweet and tonic touch of pineapple chunks is truly what gourmet dreams are made of.

A Taste of The South with A Twist

My Charleston roots come through in the comfort of this hearty dish, but with a little twist. Think of your grandma’s traditional Southern fried chicken in an adventurous stir fry setting with an explosion of flavors. Perfectly seasoned chicken breast is quickly fried, capturing that golden exterior we all love, then tossed with a series of vibrant, healthful ingredients. What sets this dish apart? The addition of wattleseed. This Australian native seed imbues a taste rich and earthy – think coffee, chocolate, and hazelnut all in one. You can purchase wattleseed from Outback Pride Fresh. Their high-quality spices take this recipe to the next level.

Health Nut Haven

Not only is this Wattleseed Chicken Stir Fry an absolute flavor touchdown, but it’s also a bona fide health haven. It’s chock-full of veggies and lean protein. The range of bell peppers offer loads of vitamins, particularly Vitamin C and A which are wonderful for immunity and eye health. Coupled with the broccoli – hello, Vitamin K and fiber – and carrots, we have a dish that actually nourishes us while lighting up our taste buds. Plus, the addition of pineapple introduces bromelain, known for its inflammation-fighting abilities – a little tropical wonder in this stir fry.

The olive oil used secures healthy fats into our meal, and the garlic and ginger infuse it with their immunity-boosting properties. Wattleseed itself is a powerhouse of protein and fiber, not to mention its low-glycemic index factor, which makes it excellent for blood sugar management. This dish can be served as a standalone meal due to its savory filling nature, or can be easily paired with a light salad or a nice grain like quinoa for a more substantial meal. Method

Step One

Season your sliced chicken breast with salt, pepper and wattleseed. Make sure each piece is evenly coated.

Step Two

Heat a large pan or wok over high heat. Add in 2 tablespoons of olive oil. Once the oil is hot, add in the chicken and stir fry until it is no longer pink and is fully cooked. Remove the chicken from the pan and set it aside.

Step Three

In the same pan, add another tablespoon of olive oil. Put in the minced garlic and grated ginger and sauté until fragrant.

Step Four

Add the sliced onions and bell peppers to the pan. Stir fry them for about 2-3 minutes, or until they begin to soften.

Step Five

Next, incorporate the broccoli florets and carrot slices into the pan. Continue stir frying for another 2-3 minutes.

Step Six

Add the pineapple chunks to the pan and stir well to combine.

Step Seven

In a small bowl, whisk together the orange juice, lime juice, soy sauce and cornstarch. Pour this mixture over the stir fry in the pan.

Step Eight

Allow the stir fry to cook for another 3-4 minutes, or until the sauce has thickened.

Step Nine

Return the cooked chicken to the pan and stir well to combine. Cook for another minute or so, just until the chicken is heated through.

Step Ten

Garnish your stir fry with toasted almonds and fresh cilantro leaves before serving. Enjoy your Wattleseed Chicken Stir Fry!
