A Medley of Flavors

This vegetable-centric pasta is not just a satisfying comfort dish, but also an exciting blend of bold and subtle flavors. It features the spiciness of peperoncini peppers, balanced with juicy chicken breasts, and augmented by the sharp tanginess of the lemon juice. The tomatoes and garlic add a sweet savory undertone, while the Parmesan and basil bring a familiar Italian touch.

What You’ll Need

  • 2 pounds chicken breasts
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup of peperoncini peppers, sliced
  • 1 cup of peperoncini juice (from the jar)
  • 2 cups cherry tomatoes, halved
  • 1 pound pasta (of your choice)
  • 1 cup grated Parmesan cheese
  • 1/2 cup fresh basil, chopped
  • 1 lemon, juiced
ALLERGENS: chicken, garlic, wheat (pasta), dairy (Parmesan cheese)

Method

Step One

Pound the chicken breasts to an even thickness to ensure equal cooking and cut into bite-sized pieces. Season the pieces with salt and pepper as desired.

Step Two

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the minced garlic and sauté until it turns golden brown.

Step Three

Add the chicken pieces to the skillet with the garlic. Cook the chicken, stirring occasionally, until it is fully cooked and browned on all sides.

Step Four

Once the chicken is fully cooked, add the peperoncini peppers, peperoncini juice, and halved cherry tomatoes to the skillet. Stir to combine the ingredients and allow the mixture to simmer for a few minutes so that the flavors meld together.

Step Five

While the chicken mixture is simmering, cook your pasta of choice according to the package instructions in a separate pot. When the pasta is fully cooked, drain it and set aside.

Step Six

Add the cooked pasta to the skillet with the chicken and vegetable mixture. Stir well to ensure that the pasta is fully coated with the sauce.

Step Seven

Remove the skillet from the heat and mix in the grated Parmesan cheese, fresh chopped basil, and lemon juice. Stir until the cheese has melted and the ingredients are well combined.

Step Eight

Serve the Peperoncini Chicken Pasta hot, with additional Parmesan cheese on top if desired. Enjoy your delicious homemade meal!
