What You’ll Need

  • 2.5 lbs of winter melon
  • 1 cup of chicken broth
  • 1 tablespoon of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 2 tablespoons of cornstarch
  • 1/4 cup of cold water
  • 3 green onions, finely chopped
  • 1 tablespoon of vegetable oil
  • 1/2 teaspoon of sesame oil
  • 2 cloves of garlic, minced
  • 1 inch of fresh ginger, peeled and minced
ALLERGENS: soy, shellfish, chicken, corn

Method

Step One

Begin by washing the winter melon thoroughly. After that, slice it into 1-inch pieces, discarding the seeds.

Step Two

Next, heat the vegetable oil in a large pan or wok over medium high heat. Add in the garlic and ginger and stir fry until the aroma comes out.

Step Three

Add the winter melon pieces into the pan, cook them for around 2 minutes until they are coated with the garlic and ginger flavor.

Step Four

In a separate bowl, mix together the chicken broth, soy sauce, oyster sauce, sugar, and salt. Once they’re thoroughly combined, pour this mixture into the pan with the winter melon.

Step Five

Reduce the heat to low, cover the pan, and let it simmer for approximately 15-20 minutes, or until the winter melon is tender.

Step Six

While the winter melon is simmering, make a cornstarch slurry by mixing the cornstarch with the cold water until it’s smooth.

Step Seven

Once the winter melon is tender enough, add the cornstarch slurry into the pan. This will thicken up the sauce. Stir well to ensure that all the winter melon pieces are coated with the sauce.

Turn off the heat, then add the green onions and sesame oil. Stir well to combine everything together.
