If you ask me why I love the Elderflower Fritters recipe, I can begin the story with my childhood in Portland, Maine, near the Atlantic coast. While my expertise might be in seafood, the plethora of sweet fruits we have here in New England cannot be overlooked. The crisp, light Elderflower Fritters burst with beautiful hints of fruits that come in tune to the lulling sound of the waves.

Elderflower Fritters

A Journey into Spring

The Elderflower Fritters carry with them a taste that is almost an embodiment of spring. The flour, sugar, baking powder, and salt blend perfectly forming a light batter which, once it meets the sizzling oil, transforms into golden clouds of subtle sweetness. Add to this the elderflower cordial, an ingredient that brings forth the beautiful, almost ethereal flavor of elderflowers. The enchanting cordial is then combined with sparkling water, eggs, and unsalted butter, enveloping each elderflower head in a golden batter, ready to be deep-fried and dusted with powdered sugar as a finishing touch.

The Sweet Health Benefits

These golden clouds of happiness aren’t just a delight to the palate but also a boon to health. The elderflower, known for its medicinal properties, can soothe your respiratory system and boost your immunity. Not to mention the berries, packed with antioxidants, add a touch of tartness and help in fending off chronic diseases. Also, using vegetable oil for deep frying keeps the fritters heart-healthy.

Then come my daughters, Erin and Samantha, who are absolutely in love with the fruity and floral tastes of these Elderflower Fritters, often pairing them with a freshly brewed cup of tea. And I must admit, this recipe elevates a teatime into a culinary journey into a blooming spring orchard.

Perfect Companions

What goes great with Elderflower Fritters? I reckon this recipe pairs well with other dishes such as a Traditional English Trifle or a Strawberry Rhubarb Pie. The mild sweetness of the fritters gives the perfect counterbalance to the rich flavors of these classics.

The Elderflower Fritters have taken a special place in my heart as they seemingly bring the spring in Maine right to our tea table. The magical combination of elderflower and mixed berries pack a plethora of tastes that are sure to enchant your mouth and leave an indelible mark on your taste buds.

What You’ll Need

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sparkling water
  • 1/4 cup elderflower cordial
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 10 elderflower heads
  • Vegetable oil (for deep frying)
  • 1 cup mixed berries (such as raspberries, blueberries, blackberries)
  • 1 tablespoon powdered sugar for dusting
ALLERGENS: Wheat, Eggs, Milk

Method

Step One

In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well to ensure these dry ingredients are fully mixed.

Step Two

In a separate bowl, beat the two large eggs. Add the sparkling water and elderflower cordial to the eggs, mixing well.

Step Three

Gradually add the liquid mixture into the bowl of dry ingredients. Stir until these elements are well combined. You are aiming for a smooth and lump-free batter.

Step Four

Stir in the melted unsalted butter into the batter, making sure it is well incorporated.

Step Five

Heat your vegetable oil in a deep fryer or large, deep saucepan to 375F or 190C. You’ll need enough oil to completely submerge the elderflower heads.

Step Six

Dip each elderflower head into the batter, ensuring it’s completely coated. Once coated, carefully place the elderflower head into the hot oil.

Step Seven

Fry the elderflower heads for about 2-3 minutes, or until they become golden brown. Remove the fried elderflower heads and drain them on paper towels.

Step Eight

Serve your elderflower fritters dusted with a sprinkle of powdered sugar. Add a side of mixed berries for a tangy contrast to the sweet fritters. Enjoy this delightful treat while it’s still warm!
