What You’ll Need
- 12 slices of crusty, Italian bread
- 3 cups of cherry tomatoes, haliczed
- 1 cup of capers, drained
- 2 cups of mozzarella, diced
- 1/4 cup of fresh basil leaves, chopped
- 3 cloves of garlic, minced
- 1/4 cup of olive oil
- Salt and pepper to taste
Method
Step One
Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). Arrange the slices of Italian bread on a baking sheet and toast them in the oven for about 10-12 minutes or until they’re nice and crispy.
Step Two
While the bread is toasting, prepare the topping. Halve your cherry tomatoes and place them in a large bowl. Add the drained capers, diced mozzarella, chopped fresh basil leaves and minced garlic to the same bowl.
Step Three
Pour the olive oil over your mixture. Season it with salt and pepper to taste, then stir everything together until well combined.
Step Four
Once your bread slices are done toasting, remove them from the oven. Allow them to cool slightly before proceeding.
Step Five
Spread the tomato mixture evenly over each slice of toasted bread. Make sure each slice gets a good amount of tomatoes, capers, mozzarella, basil, garlic, and olive oil.
Step Six
