What You’ll Need

  • 5 medium tomatillos, husked and rinsed
  • 1 small onion, quartered
  • 2 cloves garlic
  • 2 jalapenos, stemmed and seeded
  • 1/4 cup fresh squeezed lime juice
  • 1 cup cilantro leaves
  • 2 ripe avocados, halved and pitted
  • Salt, to taste

Method

Step One

Start by preheating your grill or broiler on high. Husk and rinse your tomatillos well, then place them in a grill basket along with the quartered onion, cloves of garlic, and jalapenos.

Step Two

Grill the vegetables, rotating them occasionally, until they are charred and softened. This should take around 10 minutes. Once done, remove them from the heat and let cool to a manageable temperature.

Step Three

In the meantime, zest your limes and squeeze out the juice, ensuring that you have about a 1/4 cup of fresh lime juice. Discard any seeds.

Step Four

Once the grilled vegetables have cooled, put them in a food processor along with the lime juice. Process until you have a slightly chunky puree.

Step Five

Add the cilantro leaves into the food processor and pulse until they’re finely chopped and mixed throughout the puree.

Step Six

Next, halve your avocados and remove the pits. Scoop out the ripe flesh and add it into the food processor. Process again until the mixture is smooth.

Step Seven

Taste the guacamole and season with salt according to your liking. Serve your Tomatillo Guacamole immediately with chips or your favourite Mexican dishes.
