What You’ll Need

  • 1 cup All-Purpose flour
  • 1/2 cup Granulated sugar
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 tsp Ground cinnamon
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Whole milk
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 1 cup Fresh white dragon fruit, diced
  • 1 tsp White sugar for topping

Method

Step One

Preheat your oven to 375 degrees F (190 degrees C). Line a muffin tin with paper liners or thoroughly grease and flour the entire muffin tin – be sure not to miss any spots.

Step Two

In a large bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 2 tsp baking powder, 1/2 tsp salt and 1 tsp ground cinnamon. Whisk until all of the dry ingredients are well combined.

Step Three

In a separate medium-sized bowl, whisk together 1/2 cup melted unsalted butter, 1/2 cup whole milk, 1 large egg and 1 tsp vanilla extract. Make sure that all of these are mixed properly together.

Step Four

Gradually add the wet ingredients to the dry ingredients, stirring and folding until the ingredients are incorporated. Stop as soon as there is no visible flour – do not overmix or the muffins can become tough.

Step Five

Fold in 1 cup of fresh white dragon fruit dice. Stir gently to combine and distribute the fruits without crushing them.

Step Six

Spoon the mixture into the prepared muffin tin, filling each cup just about to the top. Sprinkle each muffin evenly with a little bit of white sugar for extra sparkle and crunch on the top.

Step Seven

Bake in the preheated oven for around 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins cool in the tin for about 10 minutes then transfer them to a wire rack to cool completely. Enjoy them warm!
