What You’ll Need
- 3 cups of Basmati Rice
- 1.5 lb of Beef, cut into chunks
- 3 tablespoons of Vegetable Oil
- 2 Red Onions, finely chopped
- 6 cloves of Garlic, finely chopped
- 2 tablespoons of Ginger, grated
- 2 Green Bell Peppers, chopped
- 1 teaspoon of Alligator Pepper
- 1 teaspoon of Turmeric
- 1 teaspoon of Cumin
- 1/2 teaspoon of Cinnamon
- 1/2 teaspoon of Cardamom
- 4 cups of Beef Broth
- 2 cups of Mixed Dried Fruits (e.g. raisins, apricots, figs)
- 1 bunch of Fresh Cilantro, chopped
- Salt to taste
Method
Step One
Start by washing your 3 cups of Basmati Rice under cold water until the water runs clear. Set aside for later.
Step Two
In a large pan, heat your 3 tablespoons of Vegetable Oil over medium heat. Add the 1.5 lb of Beef chunks to the pan and cook until browned. This should take about 5-6 minutes. Once browned, remove the beef from the pan and set aside.
Step Three
In the same pan, add the chopped Red Onions, chopped Garlic cloves, and grated Ginger. Cook these until the onions become translucent. This should also take about 5 minutes.
Step Four
Add the chopped Green Bell Peppers to the pan with the onions, garlic, and ginger. Cook for another 5 minutes or until the peppers have softened.
Step Five
Now it’s time to add the spices. Add in 1 teaspoon each of Alligator Pepper, Turmeric, and Cumin, along with 1/2 teaspoon each of Cinnamon and Cardamom. Stir to mix well.
Step Six
Add the browned beef back into the pan with the vegetables and spices. Then pour in 4 cups of Beef Broth and add a pinch of Salt to taste. Bring this mixture to a simmer.
Step Seven
Once the broth is simmering, add the Basmati Rice. Reduce the heat to low, cover the pan, and let everything cook for about 20 minutes.
Step Eight
While your rice and beef are cooking, chop up 2 cups of Mixed Dried Fruits and one bunch of Fresh Cilantro.
Step Nine
After the rice has finished cooking, remove the pan from the heat and stir in the chopped Dried Fruits and Cilantro. Let everything sit, covered, for about 10 minutes before serving.
