What You’ll Need
- 2 cups of red lentils
- 1 tablespoon of vegetable oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of fresh grated ginger
- 2 teaspoons of black cardamom seeds
- 2 teaspoons of ground turmeric
- 1 teaspoon of ground cumin
- 1/2 teaspoon of cayenne pepper
- 1 can of diced tomatoes (14 oz)
- 4 cups of vegetable broth
- 1 cup of chopped fresh cilantro
- Salt to taste
- 1 lemon, juiced
Method
Step One
Start by rinsing the red lentils under cold water until the water runs clear. Set it aside for a moment.
