There is something truly special about enjoying fresh, locally-sourced produce. A classic example of this is my delightful Tomatillo Gazpacho Soup, a verdant masterpiece starring the fruity, tangy tomatillos, and supplemented by a swirl of ripe avocados, crunchy cucumbers, and the all-important punch of fresh jalapeno.
The Farm-to-Table Magic
Gone are the days when our meals were made of additive-pumped, long shelf-life ingredients. The anticipation you get from waiting for the tomatillos to be at their juicy, ripe best is immensely rewarding. The love and patience that goes into growing and then transforming these endowments of nature into a gastronomic delight, that’s what farm-to-table is all about. Not just that, this simple concept comes with profound health benefits that I can’t help but appreciate. The Vegetarian Society vouches for a decreased risk of heart disease and cancer in those who prefer a veggie-centric diet, a category our tomatillo gazpacho falls right into.
Bringing A Taste of Mexico to the Midwest
Originating from the vibrant culinary landscape of Mexico, the gazpacho with tomatillo, a green-tinted cousin of the tomato, captures an exceptional medley of textures and flavors akin to the traditional Mexican gazpacho soup . The recipe serves as a pleasant midday treat when you fancy a light yet satisfying meal, or it can be an exciting start to an elaborate Mexican feast. Imagine following this appetizing soup with a hearty dish of Mole Poblano or Vegetarian Enchiladas.
Looking Beyond the Recipe
This gazpacho soup isn’t just about sounding fancy at your next dinner party. It embodies a wholesome, nourishing approach towards cooking and eating. Each ingredient, from the garlic cloves to the vibrant bell peppers, contribute to an immensely nutrient-dense meal without piling on unnecessary calories. So, while I get to enjoy a healthy, scrumptious home-cooked meal, I am also connecting with my Midwestern roots, while embracing my love for other cultures and their beautiful cuisines.
It is these aspects – the fusion of authenticity, health, taste, and memories that make every bowl of my Tomatillo Gazpacho Soup a treat to savor. Why don’t you give it a try? Enjoy the process, the anticipation, and finally, the satisfaction. Bon Appetit!
What You’ll Need
- 5 large tomatillos, husked and minced
- 2 ripe avocados, peeled and diced
- 1 white onion, diced
- 2 cucumbers, peeled and chopped
- 4 garlic cloves, minced
- 2 green bell peppers, diced
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup of cherry tomatoes for garnish
- 6 lime wedges for serving
Method
Step One
Start by washing all the fresh ingredients properly. Then, finely mince the tomatillos, dice the avocados and onion, chop the cucumbers, mince the garlic, dice the green bell peppers, and mince the seeded jalapeno. Be careful while handling the jalapeno to avoid any skin irritation.
Step Two
In a large bowl, squeeze the juice from one lime. To this, add the chopped cilantro, minced tomatillos, diced avocado, diced onion, chopped cucumber, minced garlic, diced green bell peppers, and the minced jalapeno.
Step Three
Add in the vegetable broth into the bowl with all the ingredients. Then, pour in the olive oil and season with salt and pepper according to your taste. Stir all the ingredients together until well combined.
Step Four
Using a high-speed blender or food processor, puree the mixture in batches until the soup is smooth and well combined. You may need to scrape down the sides a few times to ensure all the ingredients are well incorporated. Once done, refrigerate the soup for a few hours until chilled.
Step Five
When ready to serve, garnish the soup with cherry tomatoes and a dash of fresh cilantro. Serve the soup with lime wedges on the side and enjoy the refreshing taste of your Tomatillo Gazpacho Soup.
