What You’ll Need

  • 6 Hungarian Wax Peppers
  • 1 Large Onion
  • 2 cups of Diced Tomatoes
  • 1 Green Bell Pepper
  • 3 cloves of Garlic
  • 3/4 cup of White Vinegar
  • 1/2 cup of Granulated Sugar
  • 2 teaspoons of Salt
  • 1/2 teaspoon of Mustard Seeds
  • 1/2 teaspoon of Celery Seeds
  • 1/4 teaspoon of Turmeric
  • 1/4 teaspoon of Cayenne Pepper

Method

Step One

Start by washing and halting 6 Hungarian Wax Peppers, 1 Large Onion and 1 Green Bell Pepper. Once it’s done, properly de-seed all the peppers. Then dice the peppers and onion into small pieces.

Step Two

In a blender or food processor, combine the diced vegetables along with 3 cloves of garlic. Pulse a few times until the ingredients are finely chopped but not liquified. You still want a bit of texture for your relish.

Step Three

Transfer the diced vegetables to a large pan over medium heat, then add 2 cups of tomatoes to the pan. Also add in 3/4 cup of White Vinegar, 1/2 cup of Granulated Sugar, 2 teaspoons of Salt, 1/2 teaspoon of Mustard Seeds, 1/2 teaspoon of Celery Seeds, 1/4 teaspoon of Turmeric, and 1/4 teaspoon of Cayenne Pepper. Give everything a good stir to combine.

Step Four

Once everything is fully combined, bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover the pan, and let the mixture simmer for about 45 minutes.

Step Five

After 45 minutes, remove the lid from the pan and continue to simmer for another 15 minutes or until the relish has thickened to your desired consistency. Make sure to stir it occasionally to prevent burning.

Step Six

Allow the relish to cool to room temperature before transferring to jars or containers. This relish can be served immediately, but for the best flavor, allow it to chill in the fridge overnight before serving.
