The moment I first whipped up my Spicy Red Wing Onion Omelette, I knew I was onto a winner. This vegetable-based powerhouse of taste and nutrition captures the essence of my New York City culinary roots, where food reflects the eclectic and vibrant spirit of the city.

Spicy Red Wing Onion Omelette

A Bite of Bold New York City Flavors

In every sautéed onion, every burst of fruity Red Wing apple, every punchy hint of chilli, this hearty omelette encapsulates that bold, no-holding-back New York City attitude. Infused with that bit of NYC flair, nothing says breakfast quite like a Spicy Red Wing Onion Omelette kicking things off brightly.

This dish is a rich blend of contrasting flavors that just works: some sharp, zippy chilli, some tangy diced apple, and the savory smoothness of cheddar cheese. It’s a homage to the city’s epic mix of cultures and cuisines – every bit as eclectic and layered as the city streets I’ve walked and lived on for years.

Healthy and Hearty

But it’s not just the bold flavors that make this omelette a winner. This recipe is also a nutritional jackpot. Eggs are high in protein and rich in wonderful nutrients like choline and selenium. The onions and apples contribute important dietary fiber, while the chillies provide a boost of vitamin C. And the cheese.. well, who can resist the creamy goodness of cheddar, with its valuable dose of calcium?

Every bite is a delicious tribute to healthy eating; a symphony of textures and tastes that will keep you satisfied till lunchtime rolls around. And let’s not forget cilantro: an optional addition for those who love its distinct refreshing flavor, and another small push towards your daily vitamin K requirements.

You could enjoy this omelette alongside a fresh, green salad or perhaps pair it with gluten-free buckwheat bread for a satisfying brunch. It also wouldn’t be out of its depth gracing your dinner table, paired with a light white wine.

In essence, the Spicy Red Wing Onion Omelette is a versatile, flavourful dish artfully straddling breakfast and dinner categories, similar to a Spanish Tortilla. It’s nutrition packed, NYC inspired, and stage actor approved.

What You’ll Need

  • 12 large eggs
  • 1 big red onion, finely chopped
  • 1 cup Red Wing apples, finely diced
  • 2 green chilies, finely chopped
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons butter
  • 1 cup cheddar cheese, grated
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh cilantro, finely chopped (optional)
  • Hot sauce to serve (optional)
ALLERGENS: Eggs, butter, cheddar cheese

Method

Step One

Start by cracking all the 12 eggs into a bowl and whisk them until they get a fluffy texture. Then, season the egg mixture with salt and black pepper according to your taste.

Step Two

In a large frying pan, melt the butter over medium heat. Add the finely chopped red onion to it. Sauté the onions for about 3-4 minutes until they become soft and clear.

Step Three

Add the finely diced Red Wing apples and finely chopped green chilies to the pan. Continue to sauté for another two minutes, or until the apples are slightly soft.

Step Four

Add the red pepper flakes to the pan, stir them into the mixture to distribute evenly. Let the mixture sauté for another minute so all the flavors meld together.

Step Five

Now pour the beaten egg mixture onto the pan, make sure it covers all the onion, apple and chili mixture. Let it cook, without stirring, until the edges start to set.

Step Six

Sprinkle the grated cheddar cheese over the top of the eggs. Cover the pan and let it cook for 3-4 minutes, or until the egg is completely set and the cheese has melted.

Step Seven

You can then optionally sprinkle the finely chopped fresh cilantro on the top. Carefully slide the omelette onto a serving plate. Cut it into wedges before serving.

Step Eight

If desired, the omelette can be served with hot sauce for an extra kick. Enjoy your Spicy Red Wing Onion Omelette while it is still warm.
