What You’ll Need

  • 12 pieces chicken thighs
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch piece of fresh ginger, finely grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 6 medium tomatoes, chopped
  • 1 cup chicken stock
  • 1 bunch fresh purslane, tough stems removed
  • 2 tablespoons fresh lemon juice
  • 1 bunch fresh cilantro, chopped for garnish

Method

Step One

Season the chicken thighs with salt and black pepper to taste. Heat the vegetable oil in a large pan over medium-high heat. Add the chicken thighs and cook until they are browned on all sides. This will take about 5-7 minutes. Once browned, remove the chicken thighs from the pan and set them aside.

Step Two

In the same pan, add the finely chopped onion and cook for about 2-3 minutes, or until it becomes translucent. Add the minced garlic, finely grated ginger, ground cumin, and ground coriander. Stir well and cook for another minute until the spices are well mixed with the onions and garlic.
