Enchantingly smooth with a delicate balance of floral hints and a rich, creamy texture – that’s how I would describe the Elderflower and Vanilla Panna Cotta which has, time and again, been a favorite dessert of mine at both lavish feasts and intimate gatherings. This Italian classic, invigorated with the distinctive aroma of elderflower, the creaminess of heavy cream, and the warm, comforting allure of vanilla, is a delightful end to any meal.

Elderflower and Vanilla Panna Cotta

The Art of Balance in Desserts

Being a Louisiana native with French ancestry, my dessert preferences always dance around the binary of Creole richness and French elegance. Unquestionably, the Elderflower and Vanilla Panna Cotta is somewhat of a ballet between these two culinary worlds. It’s a dessert that manages to embody the decadent creaminess often found in Creole desserts while remaining delicate and light, similar to the desserts of my French ancestry. This delicate balance makes the Panna Cotta a joy to indulge in, and a delight to prepare.

Healthful Indulgence

While a primary reason why I love this recipe is because of its flavor profile, it doesn’t hurt that it contains several health benefits too. Elderflowers have long been used in traditional medicine for their anti-inflammatory and immune-boosting properties, and there’s some research to suggest that they may also aid in managing blood sugar levels. Plus, the fresh mixed berries not only add a vibrant burst of color, they also provide a generous dose of antioxidants, creating a dessert that’s not just delicious, but healthful too.

In terms of perfect pairings, this improvisation on the classic Vanilla Panna Cotta delivers a delightfully refreshing note, making it a perfect companion to pasta dishes or a charming finale to a hefty steak dinner. Particularly when served with a glass of dessert wine, every bite becomes a splendid symphony of flavors.

In my countless adventures as a professional food blogger, I come across thousands of recipes – some good, some great. But every so often, there comes a recipe that’s simply spectacular, staying with you long after the plates have been cleared away. The Elderflower and Vanilla Panna Cotta is just such a recipe. It symbolizes everything I love about desserts: innovation, creativity, and a tantalizing taste that transports you to another world.

What You’ll Need

  • 1 quart of heavy cream
  • 1/2 cup of sugar
  • 1 vanilla bean, split lengthwise
  • 2 tablespoons of powdered gelatin
  • 6 tablespoons of cold water
  • 6 large elderflower heads
  • 1/2 cup of elderflower cordial
  • 2 cups of mixed fresh berries (for serving)
  • Mint leaves (for garnish)
ALLERGENS: Milk

Method

Step One

Begin by soaking the gelatin in the cold water until it softens. This usually takes about 5 minutes. Set this aside to use later.

Step Two

In a large saucepan over medium heat, combine the heavy cream and sugar. Stir this until the sugar is completely dissolved, which should take around 5 to 7 minutes.

Step Three

Add the split vanilla bean to the saucepan, making sure to scrape out the seeds and include them in the mixture. Stir the mixture until fully combined.

Step Four

Add in the elderflower heads and elderflower cordial. Stir continuously for about 10 minutes in order to infuse the cream with the flavors.

Step Five

Remove the saucepan from the heat and discard the elderflower heads. Then, add the soaked gelatin in and stir until it is completely dissolved into the mixture.

Step Six

Divide the mixture evenly into six serving dishes. Place these in the refrigerator to set, which should take approximately four hours (or can be left overnight for best results).

Step Seven

When you are ready to serve, top each panna cotta with a generous serving of fresh berries. Garnish with mint leaves for presentation, and serve chilled.
