What You’ll Need

  • 1.5 pounds of tomatoes
  • 2 tablespoons of ajwain (carom) seeds
  • 1 teaspoon of cumin seeds
  • 1/4 cup of tamarind paste
  • 2 tablespoons of vegetable oil
  • 2 teaspoons of mustard seeds
  • 2 teaspoons of fenugreek seeds
  • 1 red chili pepper, chopped
  • 1/2 teaspoon of turmeric powder
  • 1/4 cup of chopped, fresh coriander
  • 1 tablespoon of jaggery (or to taste)
  • Salt to taste
  • 1.5 cups of water

Method

Step One

First, heat the vegetable oil in a large pan over medium heat. Once the oil is hot, add the mustard seeds, cumin seeds, and ajwain seeds to the pan. Sauté these ingredients until they begin to splutter and release their fragrant aromas.

Step Two

Next, add the fenugreek seeds to the pan and continue to sauté for another 1-2 minutes. After the fenugreek seeds have slightly browned, add the chopped red chili pepper to the pan. Stir all the ingredients well to ensure they are evenly coated in the oil.

Step Three

Now, chop the tomatoes into small pieces and add them to the pan. Stir well to combine with the other ingredients, then add the jaggery, tamarind paste, and turmeric powder. Mix well, ensuring that the tomatoes are fully coated with the seasonings.

Step Four

Lower the heat and allow the mixture to cook for about 10 minutes, or until the tomatoes are soft and well-cooked. Remember to stir occasionally to prevent the ingredients from sticking to the pan.

Step Five

Next, add the chopped fresh coriander to the pan and stir well. Coriander will add a fresh note to the chutney.
