I’m here today to share one of my favorite recipes which is subtly similar to the Southern dishes I grew up with but with a healthier twist; the Shaved Fennel, Radish and Grapefruit Salad. What You’ll Need

  • 2 medium fennels, thinly sliced
  • 6 radishes, thinly sliced
  • 2 large grapefruits, segmented
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon grapefruit zest
  • Salt and pepper, to taste
  • 1/4 cup chopped flat-leaf parsley

Method

Step One

Start by preparing the vegetables: thinly slice the fennel and radishes. Segment the grapefruits. Reserve one tablespoon of grapefruit zest for the dressing.

Step Two

In a large bowl, add the sliced fennel, radishes and grapefruit segments. Toss these ingredients gently to mix them up.

Step Three

To prepare the salad dressing, whisk together the extra-virgin olive oil, honey and grapefruit zest in a small bowl. Season this mixture with salt and pepper to taste.

Step Four

Now dress the salad. Pour the dressing over the fennel, radishes and grapefruit in the large bowl. Using two large spoons or salad tongs, toss the salad ingredients gently but thoroughly to ensure they’re nicely coated in the dressing.

Step Five

Just before serving, sprinkle the salad with the chopped flat-leaf parsley. This adds a pop of color and some extra fresh, herby flavor to the dish. Serve immediately and enjoy!
