What You’ll Need

  • 2 tablespoons Olive Oil
  • 1 large Onion, finely sliced
  • 2 cloves of Garlic, minced
  • 1 tablespoon fresh Ginger, grated
  • 1 tablespoon Garam Masala
  • 1 teaspoon Turmeric
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Chili powder
  • 1 15 ounce can Chickpeas, drained and rinsed
  • 3 large Carrots, diced
  • 2 medium Potatoes, cut into 1 inch cubes
  • 1 medium Cauliflower, cut into florets
  • 2 Cups Vegetable broth
  • 1 cup Green peas, fresh or frozen
  • 1 large Tomato, chopped
  • Salt and Pepper to taste
  • Fresh Cilantro leaves for garnishing

Method

Step One

Heat the olive oil in a large skillet over medium heat. Add the sliced onion, minced garlic and grated ginger, sauté until the onions become translucent and the garlic is fragrant.

Step Two

Add the garam masala, turmeric, cumin, and chili powder to the skillet. Stir well to combine these spices with the onion, garlic, and ginger.

Step Three

Add the drained and rinsed chickpeas, diced carrots, cubed potatoes, and cut cauliflower florets to the skillet. Toss well to make sure the vegetables are well coated with the spice mixture.

Step Four

Pour the vegetable broth into the skillet. Bring the mixture to a simmer, cover the skillet and allow the mixture to cook for 20 to 25 minutes, or until the vegetables are tender.

Step Five

Add the green peas and chopped tomato to the skillet. Stir well to combine these ingredients. Season the mixture with salt and pepper to taste. Allow the mixture to cook for an additional 5 minutes.

Step Six
