What You’ll Need

  • 2 cups of Yautia (taro root), peeled and chopped
  • 1 cup of Horquetas (italian pasta noodles)
  • 2 tablespoons of Olive oil
  • 3 cloves of Garlic, minced
  • 1 can of Evaporated Milk (12 oz)
  • 1 cup of Heavy Cream
  • 1 cup of Grated Parmesan cheese
  • Salt and Pepper to taste
  • 2 Mangoes, pitted and cubed
  • 1 cup of Strawberries, hulled and sliced
  • 1/2 cup of Blueberries
  • 1/4 cup of Chopped fresh basil
  • Zest of 1 Lemon

Method

Step One

Start by washing the yautia (taro root) thoroughly. After this, peel and chop them into small pieces. Set these aside for now.

Step Two

Boil a pot of salted water, and cook the horquetas (Italian pasta noodles) according to the package instructions until they are al dente. Once done, drain the pasta and set it aside.

Step Three

In a large saucepan, heat the olive oil over medium heat. Add in the garlic, and cook for about 1-2 minutes, or until it becomes fragrant.

Step Four

Add the chopped yautia to the saucepan, and keep it stirring. Cook until they become tender. This might take about 10-15 minutes.
