What You’ll Need

  • 6 salmon fillets (around 6 ounces each)
  • 2 large lemons (for zesting and thinly sliced)
  • 2 tablespoons of extra-virgin olive oil
  • 2 tablespoons of dry white wine
  • 2 cloves of garlic, minced
  • 1 bunch of fresh dill, chopped
  • Salt and freshly ground black pepper to taste
  • 6 parchment paper sheets
ALLERGENS: Fish, garlic

Method

Step One

Start by preheating the oven to 400 degrees Fahrenheit (200 degrees Celsius).

Step Two

Now, arrange each of the 6 sheets of parchment paper on a flat surface. Place one salmon fillet in the center of each of these sheets.

Step Three

Zest one of the lemons over the fish fillets. Slice the same lemon and divide the slices among each of the salmon fillets, setting them on top. The second lemon should be juiced, and the juice evenly divided among the salmon.

Step Four

Drizzle each filet with the 2 tablespoons of extra-virgin olive oil and 2 tablespoons of white wine. Following this, distribute the minced garlic and chopped dill among the fillets. Season each piece with salt and freshly ground black pepper to your personal taste.

Step Five

Fold the parchment paper over the salmon, and cinch the paper together by folding it over itself along the edges. Make sure this seal is tight so that none of the juices or steam escape during the baking process.

Step Six

Place all the packets on a baking sheet. Bake in the preheated oven for about 15-20 minutes. The salmon should be cooked to your preferred level of doneness.

Step Seven

Once cooked to your satisfaction, remove the baking sheet from the oven. Be careful when opening the parchment packets as hot steam will escape. Serve the salmon in the packets for a lovely presentation.
