An aromatic joy to prepare and an even greater delight to devour, the Savory Herb Chicken is one recipe that touches every string of my heart. Succulent chicken breasts drenched in a marinade of tangy lemon and savory herbs, this dish is as delightful to the taste-buds as it is nourishing to the body.

Savory Herb Chicken

A Fusion of Culinary Sensibilities;

As a Boston native with Irish roots, my culinary expressions often dabble in New England seafood and Irish comfort food. Despite its simplicity, the Savory Herb Chicken is a beautiful blend of my different culinary sensibilities. Reminiscent of the New England’s fondness for fresh herbs and the Irish’s deep love for hearty chicken dishes, this recipe quickly became a staple in our dinner rotations.

The Joy of Family and Food

Every time I prepare the Savory Herb Chicken, it brings back fond memories of cooking together with my family, my grandmother’s warm kitchen filled with the fragrance of herbs and our collective laughter. Now, as a father, I’m thrilled to pass this cherished family recipe onto my own lad. Cooking it for Laura, my fiancée, during our initial dating days is where the magic of this dish truly unfolded.

Nutrition in Every Bite

But it’s not just the taste that I adore. This dish is brimming with essential nutrients. The olive oil packs a healthy punch of monounsaturated fats, the chicken is a rich source of lean protein, while the abundance of fresh herbs and lemon juice provide a generous serving of vital vitamins and antioxidants.

If you’re in the mood for an Italian adventure, this chicken is reminiscent of the ever-popular Chicken Piccata, sans capers. Moreover, it pairs beautifully with side dishes, such as Creamy Parmesan Orzo or a crisp Green Salad.

From its delightful fusion of flavors to its wealth of health benefits, the Savory Herb Chicken is a valued piece of my culinary heritage that I’m thrilled to share with you all.

What You’ll Need

  • 6 boneless, skinless chicken breasts
  • 1/2 cup olive oil
  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
ALLERGENS: Garlic

Method

Step One

Place the chicken breasts into a large bowl or dish.

Step Two

Using a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper.

Step Three

Pour the oil mixture over the chicken breasts and rub it in, ensuring the chicken is thoroughly coated.

Step Four

In another bowl, combine the fresh rosemary, thyme, oregano, basil, and parsley. Sprinkle the herb mixture onto the chicken, making sure each piece is well coated.

Step Five

Cover the dish or bowl and refrigerate. Allow the chicken to marinate for at least 2 hours, but preferably overnight, for best flavor.

Step Six

Preheat your grill or oven to medium heat. If grilling, place the chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165° F. If baking, place the chicken into a baking dish and bake at 375° F for 25-30 minutes or until chicken is cooked through.

Step Seven

Allow the chicken to rest for a few minutes before serving to ensure it remains juicy. Serve with your favorite sides for a savory and satisfying meal.
