  • 2 lbs cardoons
  • 1 lemon, juiced
  • 4 cups water
  • 3 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon fresh thyme leaves

  • 1/2 teaspoon red pepper flakes
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup Parmesan cheese, grated
  • 1 1/2 cups breadcrumbs

Method

Step One

Preheat your oven to 375 degrees Fahrenheit. As the oven heats, prepare the cardoons. These need to be trimmed of any leaves or tough outer stalks and then cut into 2 to 3-inch pieces.

Step Two
