There’s something quite magical about the Stir-fried Badderlocks with Garlic recipe. A humble celebration of maritime flavors, this vegetable-based dish combines the earthiness of seaweed with the robust punch of garlic, propelled by the subtle medley of other fresh, colorful ingredients. It’s a culinary journey that transports you to the rocky shores of Maine’s beautiful coastline, offering a delicious peek into New England’s oceanic bounty.

A Taste of the Atlantic

As a local Mainer, I have a deep-rooted love for seafood; I find a certain charm in its versatility and the diverse array of dishes it spawns. Although our Stir-fried Badderlocks with Garlic recipe isn’t exactly a traditional seafood dish, it taps into the marine essence, harnessing the saline whiff and taste of the Badderlocks seaweed. The Badderlocks, more commonly known as Alaria, is a cold water seaweed native to own Atlantic waters. Using this nutrient-rich ingredient, the recipe manages to create a harmonious convergence of sea and land produce, resulting in a dish that feels familiar yet altogether exciting.

Health and Flavours Hand-in-hand

What I particularly adore about the Stir-fried Badderlocks with Garlic dish is how it doesn’t compromise health for flavor. The Badderlocks seaweed, for example, is an underappreciated nutritional powerhouse, packed with iodine, magnesium, and vitamin B12. The vegetables—bell peppers, carrots, and onions, on the other hand, each carry their own set of health benefits, adding vitamins, fiber, and antioxidants to the mix. The garlic isn’t just there for taste; it’s a known immune booster too. Moreover, with a controlled dash of sodium from soy sauce and enriched with olive oil’s heart-healthy fats, this recipe serves not just a delightful meal but a wholesome one.

This dish is reminiscent of Asian stir-fries in both preparation and flavor profile. It pairs wonderfully with a bowl of steamed white or brown rice, or if you’re wanting to keep the theme, a side of grilled fish or oven-roasted shellfish could cap off this maritime meal beautifully. Fancy some wine? Opt for a dry white or a rosé to complement the dish’s inherent freshness.

Preparing this dish, my thoughts often drift to my daughters, Erin and Samantha, who’ve grown up relishing the bounty of our local markets and with an appreciation for the simple, wholesome goodness of New England cooking. Recipes such as this, Stir-fried Badderlocks with Garlic, exemplify this philosophy and enable us all to savor the beauty of nature’s pantry, straight from the sea and earth to our plates.

What You’ll Need

  • 1 pound of fresh Badderlocks seaweed
  • 6 cloves of garlic, finely chopped
  • 3 tablespoons of olive oil
  • 2 large bell peppers, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 medium carrots, julienned
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 1 tablespoon of soy sauce
  • 1 tablespoon of rice vinegar
  • 2 teaspoons of sesame oil
  • 1 tablespoon of sesame seeds
ALLERGENS: garlic, soy sauce, sesame oil, sesame seeds

Method

Step One

First, prepare the Badderlocks seaweed. Rinse it thoroughly under cold water to remove any dirt or sand, draining it well after. Cut it into bite-sized pieces for easier cooking.

Step Two

Next, heat 3 tablespoons of olive oil in a large pan or wok over medium heat. Once the oil is hot, add the finely chopped garlic and stir it in the oil until it turns light brown and aromatic.

Step Three

Add the thinly sliced bell peppers and onion to the pan, stir frying them until they soften. Then, add the julienned carrots and continue to stir fry all the vegetables together.

Step Four

When the vegetables have softened, add the cut Badderlocks seaweed to the mix. Season everything with 1 teaspoon of salt and 1/2 teaspoon of ground black pepper, stirring well to ensure everything is evenly coated.

Step Five

Finally, add the soy sauce, rice vinegar, and sesame oil, stirring everything together to combine the flavors. Once everything is well mixed, remove the pan from the heat. Sprinkle the stir-fried Badderlocks with the sesame seeds as a garnish before serving.
