What You’ll Need

  • 1 tablespoon olive oil
  • 2 cloves of garlic, diced
  • 1 inch piece of fresh ginger, peeled and minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas, strings removed
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
ALLERGENS: Soy

Method

Step One

Heat the olive oil in a large pan over medium heat. Once the oil is hot, add the diced garlic and minced ginger. Sauté them until they become fragrant but be careful not to burn them.

Step Two

Add the sliced onion to the pan, stirring frequently to avoid burning. Cook until the onion becomes translucent, typically 4-5 minutes.

Step Three

Add the sliced bell pepper and zucchini to the pan. Continue to cook, stirring occasionally, until these vegetables begin to soften, usually taking around 5-7 minutes.

Step Four

Now, add the broccoli florets and snap peas to the pan. Stir well to mix everything together. Continue cooking for another 4-5 minutes until the broccoli and snap peas are tender but still retain some crispness.

Step Five

Add in the halved cherry tomatoes to the pan. Stir gently, making sure not to crush the tomatoes. Continue to cook for about 2-3 minutes until the tomatoes are just warmed through.

Step Six

Sprinkle in the soy sauce, and season with salt and pepper to your taste. Stir well to mix the sauce and seasonings evenly throughout the vegetables. Cook for another minute to allow the flavors to meld together.

Step Seven

Remove the pan from the heat. Taste and adjust the seasonings if needed. Your Ginger Garlic Sautéed Vegetables are now ready to be served hot.
