What You’ll Need

  • 3 cups of Ground Elder Leaves
  • Shortcrust pastry, enough for a 9 inch pie tin
  • 1 cup of Cheddar Cheese
  • 4 Large Eggs
  • 1 1/2 cups of Heavy Cream
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 Tomatoes, sliced
  • 1 Onion, finely chopped
  • 2 cloves of Garlic, minced
  • 1 tbsp Olive Oil
ALLERGENS: Gluten (in shortcrust pastry), Dairy (in cheddar cheese and heavy cream), Eggs

Method

Step One

Preheat your oven to 375 degrees F (190 degrees C). Roll out your shortcrust pastry and line your 9-inch pie tin. Put this in the fridge to chill.

Step Two

While the pastry is chilling, rinse your ground elder leaves under cold water to remove any dirt or bugs. Drain well and set aside.

Step Three

Heat the olive oil in a frying pan over medium heat. Add the onion and garlic and cook until they are soft and translucent, about 5 minutes. Add the drained ground elder leaves to the pan and cook for another 2-3 minutes, until they have wilted down.

Step Four

In a separate bowl, beat the eggs and add the heavy cream. Mix in the salt and black pepper.

Step Five

Take the chilled pie tin out of the fridge. Sprinkle the base with the cooked onions, garlic, and ground elder mixture. Pour over the egg and cream mixture. Sprinkle the top with cheddar cheese and arrange the sliced tomatoes on top.

Step Six

Place the quiche in the preheated oven and bake for about 40-45 minutes, until the edges are golden and the filling is set. Remove from the oven and let it cool for a few minutes before serving.
