What You’ll Need

  • 1 lb Chicken (cut into cubes)
  • 1.5 tablespoons Olive Oil
  • 1 cup Carrots (diced)
  • 1 cup Celery (diced)
  • 1 Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Celery Seed
  • 6 cups Chicken Broth
  • 1/2 cup Fresh Parsley (chopped)
  • Salt to taste
  • Pepper to taste

Method

Step One

Heat the olive oil in a large pot over medium heat. Once the oil is shimmering, add the cubed chicken and cook it until it’s browned on all sides. This should take about 5 to 7 minutes.
