As a big fan of vibrant, hearty meals, I found that this Sago with Coconut Milk and Fruit Recipe brilliantly coupled my love for indulgence with my commitment to health living. The health benefits are numerous; sago pearls are a superb source of carbohydrates, giving you the much-needed fuel for your day. The medley of mango, cantaloupe, banana, and pomegranate seeds provides a wealth of vitamins, minerals, and antioxidants. Plus, coconut milk contributes to heart health with its lauric acid content.

Taste of the Tropics

This recipe not only treats your taste buds but also lets your imagination take a little vacation. It’s quite similar to the tropical fruit salads I enjoyed during my culinary adventures in the coastal areas of South America. Moreover, it serves as a refreshing dessert to balance out a rich, savory main course like Southern Style Fried Chicken.

What You’ll Need

  • 1/2 cup of sago pearls
  • 1 can (13.5 oz) of coconut milk
  • 1/2 cup of granulated sugar
  • 3 cups of water
  • 1 cup of diced mango
  • 1 cup of cubed cantaloupe
  • 1 cup of sliced bananas
  • 1/2 cup of pomegranate seeds
  • 6 leaves of fresh mint for garnish
ALLERGENS: Coconut

Method

Step One

Pour the sago pearls into a pot and add enough water to cover them. Let them soak for around 15 minutes. After they have absorbed the water, drain the sago pearls and set them aside.

Step Two

Bring the 3 cups of water to a boil in a large pot. Once boiling, add in the soaked and drained sago pearls. Stir continuously to prevent the pearls from clumping together. Let it boil for around 10 minutes, or until the sago pearls become transparent.

Step Three

Once the sago pearls are cooked, drain them and rinse under cold running water. This will help to remove any excess starch and prevent them from sticking together.

Step Four

In the same pot, pour in the can of coconut milk. Add the granulated sugar and stir until it dissolves completely. Bring the mixture to a gentle simmer.

Step Five

Add the cooked and drained sago pearls back into the pot with the coconut milk and sugar. Stir everything together until the pearls are well-coated in the sweet coconut milk mixture. Let it cook for an additional 5 minutes.

Step Six

Remove the pot from the heat and let the sago and coconut milk mixture cool down. You can put it in the fridge for an hour to hasten the cooling process.

Step Seven

In the meantime, prepare your fruits. Dice the mango, cube the cantaloupe, slice the bananas, and remove the pomegranate seeds from the pomegranate.

Step Eight

Once the sago and coconut milk mixture has cooled down, you can start assembling your dessert. In each bowl or glass, layer some of the sago and coconut milk mixture, followed by some of each fruit. Repeat these layers until you’ve used up all the mixture and the fruits.

Step Nine

Garnish each serving with a fresh mint leaf. Your delicious Sago with Coconut Milk and Fruit is ready to serve. Enjoy!
