What You’ll Need

  • 12 ounces of chicken hearts
  • 2 tablespoons of olive oil
  • 1 garlic clove, finely chopped
  • Salt to taste
  • Black pepper to taste
  • 1.5 cups of Shepherd’s purse leaves, chopped
  • 1 large onion, finely chopped
  • 1 lemon, juiced
  • 2 apples, diced
  • 1 pear, diced
  • 1 teaspoon of fresh ginger, minced
  • 0.5 cup of chicken broth
ALLERGENS: Garlic, Onion

Method

Step One

First, cleanse the chicken hearts thoroughly under cold running water. Drain them well and set aside.

Step Two

Next, heat up the olive oil in a large frying pan over medium heat. Add the finely chopped garlic and sauté until it becomes aromatic and lightly golden. Be careful not to burn the garlic, or it will turn bitter.

Step Three

Add the chicken hearts to the pan, season with salt and black pepper to taste, and let them cook until they are well-browned. This usually takes about 5-7 minutes.

Step Four

Now, stir in the chopped Shepherd’s purse leaves and the finely chopped onion. Let them cook for another 3-5 minutes, or until the onion becomes soft and translucent.

Step Five

Squeeze in the juice of one entire lemon, then add the diced apples and the diced pear. Stir to mix well and let it cook for another 2 minutes. The acidity from the lemon juice will help to balance out the sweetness from the fruits.

Step Six

Add in the fresh ginger and the chicken broth, stir again to mix well, then allow the dish to simmer for about 10 minutes. The broth will help to meld all the flavors together while the ginger adds a kick of heat and aroma.

Step Seven

Finally, taste and adjust the seasoning if necessary. Once you’re satisfied with the flavor, remove the pan from the heat. Your Shepherd’s Purse and Chicken Heart Saute is now ready to be served and enjoyed!
