My use of Sichuan peppercorns is my nod to Japanese appreciation for spice, while including mangos adds that touch of sweetness lending for a balanced taste. Layered with ingredients including ginger, garlic, soy sauce, and rice vinegar, the recipe offers a delightful blend of salty, sweet, tangy, and umami flavors in a harmonious symphony that hits just the right taste buds.

What You’ll Need

  • 2 pounds of prawns, cleaned and deveined
  • 2 tablespoons of Sichuan peppercorns
  • 4 tablespoons of vegetable oil
  • 2 tablespoons of ginger, minced
  • 5 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of cornstarch
  • 1 cup of water
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced
  • ½ cup of spring onions, sliced
  • 1 jalapeno pepper, sliced (optional)
  • 1 cup of mangoes, cubed
  • Salt to taste

Method

Step One

Start by heating a large wok or frying pan over medium heat. Once it’s hot, add the Sichuan peppercorns and toast them until they become fragrant. This should take about 2 to 3 minutes. Once they’re toasted, grind them using a spice grinder or a mortar and pestle and set them aside.

Step Two

Heat the vegetable oil in the same wok or frying pan over medium heat. Add the minced ginger and garlic and sauté them until they become fragrant. This should take about 1 to 2 minutes.

Step Three

Add the cleaned prawns to the pan and stir to combine them with the ginger and garlic. Cook the prawns until they turn pink, which should take about 3 to 4 minutes.

Step Four

While the prawns are cooking, mix together the soy sauce, rice vinegar, ground Sichuan peppercorns, cornstarch, and water in a small bowl. Once the prawns are cooked, pour this mixture over them and stir to combine.

Step Five

Add the sliced red and green bell peppers, sliced spring onions, sliced jalapeno pepper (if you’re using it), cubed mangoes, and salt to taste to the pan. Stir to combine all of the ingredients.

Step Six

Cook the mixture for an additional 5 to 7 minutes, or until the peppers are tender and the prawns are cooked through.

Step Seven

Once everything is cooked, serve the Sichuan Pepper Prawns hot, with steamed rice or noodles on the side if you like. Enjoy your meal!
